Chocolate Walnut Cookies

These chocolate walnut cookies are chewy and decadent. With nuts, seeds, and coconut, this makes for a perfect snack or to enjoy whenever you need a quick bite. This recipe is gluten free and doesn't contain any eggs. It's a simple recipe and healthy too.


Yield: ~18 cookies

Prep time: 15 minutes

Cook time: 10 minutes

Total time: 25 minutes





Ingredients:

  • 1 tablespoon ground flax seeds + 3 tablespoons water

  • 1 banana

  • ½ cup coconut oil

  • ½ cup coconut sugar*

  • 1 tsp vanilla extract (this is optional)

  • 1 cup almond flour**

  • ¾ cup gluten free flour**

  • ½ teaspoon baking soda

  • ½ teaspoon salt

  • ½ cup chopped walnuts

  • ½ cup rolled oats

  • ¼ cup chopped dark chocolate

  • ¼ cup shredded coconut

  • ¼ cup sunflower seeds

Notes:

* Feel free to add any type of sugar, but we prefer coconut sugar for the caramelized taste

** if you don't have almond flour or gluten free flour, you can use regular flour
