You will also have plenty of leftovers as well. Chickpeas pack tons of protein and fiber which will provide you with a complete meal to fuel your day. Our version of the chickpea curry provides tons of flavor and flexibility.


Yield: 8 servings (depending on the portions)

Prep time: 8-9 hours (overnight soaking)

Cook time: 24 minutes

Total time: ~30 minutes


Ingredients:

  • 6 cups soaked chickpeas*

  • 1 teaspoon mustard seeds

  • 6 cloves garlic crushed

  • 1 tablespoon chili powder**

  • 1 tablespoon coriander powder**

  • ½ tablespoon ground turmeric**

  • 1 tablespoon salt

  • enough water to cover the chickpeas in cooker


Notes:

*If using dried chickpeas, soak them overnight; you can also use canned chickpeas

**Feel free to use any spices you have on hand
