Kerala Egg Roast (Nadan Mutta Roast)

Also known as mutta (egg) roast is a simple dish that requires only few ingredients. This a traditional recipe from Kerala, India where we are originally from. Boiled eggs are roasted in a gravy of tomatoes, onions and beautiful spices. Enjoy this dish with warm noolappam/ idiyappam, or chapati. This is one of the curries that embodies the rich flavors and authenticity of Kerala's cuisine.

Ingredients:

  • 4 eggs boiled

  • 3 big red onions thinly sliced

  • 2 tomatoes chopped

  • 7 cloves garlic crushed

  • 2 teaspoons crushed ginger

  • 1 teaspoon salt

  • 2 teaspoons coriander powder

  • 1 teaspoon turmeric powder

  • 2 teaspoons chili powder

  • 1 teaspoon garam masala
