Tofu vermicelli bowl

These tofu vermicelli bowls are filled with protein, vegetables, and chewy vermicelli noodles. This recipe is healthy and perfect for a light meal. On top of the vermicelli noodles are crispy tofu, and stir fried vegetables with soft scrambled eggs which you can whip up all in about 30 minutes. Feel free to add whatever toppings you have on hand.

Ingredients

  • 200g vermicelli noodles

  • 2 cups mixed vegetables*

  • 2 eggs scrambled

Crispy tofu

  • 500g firm tofu

  • 1 tablespoon oil

  • 1 teaspoon salt

  • 1 teaspoon onion powder

  • 1 teaspoon garlic powder


Notes:

*Feel free to use any vegetables you have on hand
