Vegetable Lasagna

Perfect for family nights and packed with delicious vegetables and aromatics. This vegetable lasagna recipe is layered with cheese, a beautiful tomato sauce and sautéed zucchini, bell pepper, and spinach.

Cook time: 30 minutes

Total time: 1 hour 12 minutes





Ingredients:

  • 2 teaspoons of olive oil

  • 1 zucchini

  • 1 bell pepper

  • 2 handfuls of spinach

  • 1 teaspoon salt*

  • 1 teaspoon pepper*

  • ½ an onion

  • 2 teaspoons of tomato paste

  • 16g - 4 links of vegan sausage (or any ground meat)

  • 1 canned tomatoes

  • parsley and mint (optional, but gives it a great flavor)

Notes:

*add salt and pepper according to taste along the way
